Ingredients

  • 1 cup unsalted butter, softened
  • ¾ cup packed brown sugar
  • ¾ cup white sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 ¼ cups almond flour
  • 1 cup coconut flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ½ cup chocolate chips, or to taste
  • ¼ cup shredded coconut
  • ¼ cup rolled oats (Optional)

Steps

  1. Preheat the oven to 375 degrees F (190 degrees C). Line two baking sheets with parchment paper.
  2. Beat butter, brown sugar, and white sugar with an electric mixer in a large bowl until creamy. Add vanilla extract; beat in eggs, one at a time.
  3. Combine almond flour, coconut flour, baking soda, and salt in a separate bowl; mix into butter mixture just until combined. Add chocolate chips, coconut, and oats; stir until just combined.
  4. Scoop cookie dough onto the prepared baking sheets.
  5. Bake in the preheated oven until browned, 12 to 15 minutes.
